The end of summer means soaking up the last days of outdoor grilling. This Cuban Mojo Chicken is the perfect recipe for weekends, weeknights, or any time you want something quick and delicious during the final days of the season.

For the Mojo Marinade:

  • 6 garlic cloves, peeled
  • 1 medium shallot, roughly chopped
  • 2 teaspoons of kosher salt
  • 1 lime, zested (approx. 2 teaspoons of grated lime zest)
  • 1 1/2 teaspoons of ground cumin
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of freshly ground black pepper
  • 1/2 cup of Florida’s Natural® No-Pulp Orange Juice
  • 1/3 cup of freshly squeezed lime juice
  • 1/3 cup of extra virgin olive oil

For the Chicken:

  • 3 pounds of boneless, skinless chicken thighs
  • 2 teaspoons of kosher salt
